Chipotle!  One of those funny words that often times gets mispronounced.  So how do you say it?  Like this:  Chip Oat Lay!

Here’s one of those quick meals that you can create in advance.  It makes for a great weekday lunch or a yummy dinner!

You can marinate your chicken ahead of time or if you’re a procrastinator like me, you can season it just before putting in on the grill.  Then add it to a bed of Romaine Lettuce and top it with some fresh avocado and my yummy Black Bean Salad!

Ingredients:

Chicken Breasts or Tenderloin

Chipotle Seasoning (dried, powdered, smoked jalapenos)

Salt

Lime Juice

Olive Oil (I used this Jalapeno Infused Olive Oil)

Black Bean Salad

Sliced Avocado

Romaine Lettuce

Extra Lime Juice to squeeze over the finished product as “dressing”

Directions:

wpid-img_20140502_144700.jpgToss the chicken with the other first four ingredients (seasoning, salt, lime juice and oil) then grill it till it’s done.

Put it on a bed of Romaine and top with Black Bean Salad, Avocado and give it a squirt of lime juice and maybe an extra pinch of salt.  That’s it!

Super refreshing and filling!  Full of protein, healthy fats, good carbs and fiber!
